The Produce Box 2014

The Produce Box is going year round! This is where I’ll chronicle my use of this wonderful service. I’ve found myself wanting remember which recipes I used!

Asian dinner: Sauteed Bok Choy and Cucumber Sumonomo

Strawberries went into a fresh strawberry pie.
Bok choy, onions, and some carrots found their way into a stir fry with udon noodles (variation on Japanese pan noodles).Carrots: gingered Carrots.

Berries are snacks.
Lettuce, peppers, and some tomatoes went into salads.
Green beans — sent some with daughter. The rest went into dinner with potatoes.
Cabbage became Lazy, Unstuffed Cabbage as well as garnish for tacos.
Peppers were used for a variety of meals.
Sweet potatoes (quite a collection) went into a yummy sweet potato butter.

Peanuts, strawberries, and most of the peppers are snacks!
Lettuce, tomatoes, and cucumber became salads.
Kale in smoothies.

As usual, the strawberries were snacks.
Grilled carrots and zucchini to accompany chicken kebabs.
The green beans (steamed with mushrooms and lemon juice), potatoes (roasted), and some of the carrots (gingered) from a previous week were served for Easter Dinner.
The spinach was used for Dak Bokkeum (Korean stewed chicken). Yum!
I created a Mexican corn and zucchini dish that used corn and jalapeno (both frozen from previous weeks/months) and zucchini to go with tacos.
Skipped 4/11 (out of town for triathlon)

Chicken-and-Collards Pilau — again. It’s that good!
Sweet potatoes were roasted for one meal, baked as a side for another.
Sweet potatoes and carrots in a tagine (subbed for the butternut squash). Mmmm.
Stir-fry with squash, carrots, green beans, onions, and peppers.
Shrimp tacos were dressed with sauteed zucchini, and a tomato went into guacamole.

Onions are always useful in nearly any meal.
The lettuce made several salads.

Strawberries, tangerines, and some of those baby bell peppers were eaten, quickly, as snacks.
Lettuce, cucumbers, and tomatoes became a salad.
Chicken Pepper Steak used a tomato, a bell pepper, and a banana pepper. Mike said to make this again! We had sweet potatoes from previous weeks as a side.

Snacks: Strawberries (of course), and those yummy, sweet, tiny, red bell peppers.
Tomatoes — sandwiches and guacamole.
Carrots — sliced and frozen, since next week will be the last of these delicious veggies until fall.
Kale — smoothies for the triathlete.
Grapefruit marinade for salmon, served with a medley of summer squash, carrots, peppers, broccoli, and other produce with herbs.
Chicken-and-Collards Pilau — this was DELICIOUS!
Grapefruit & Ginger Tart — the most “grapfruity” of the grapefruit recipes I’ve tried, but nicely sweet and pairs nicely with the ginger.

Jalapenos were frozen (whole) for future recipes.
Clementines are SO sweet! Delicious snacks.
Shrimp Pesto with Veggies — tossed squash, carrots, and green pepper with a few other veggies and some pesto I froze from last year’s basil harvest, served over rice. YUM!

Grapefruit, oranges, summer squash, broccoli, carrots, strawberries. Farm Box, 2/28/2014:
Strawberries – snacks, gone in a few hours! Oranges took a little longer to consume as snacks.
Zucchini Rice Pilaf
Zucchini Fritters with Orange Shrimp (the Orange Shrimp is DELICIOUS!)
Spicy Asian Pork Chops (uses carrots, zucchini, and last week’s green pepper)
Louisiana Sweet Potato Pancakes (last week’s sweet potatoes)
Fettuccine Primavera — no recipe, just chopped broccoli, carrots, squash, and some of last week’s green pepper sauteed with a bit of lemon juice and a splash of wine, served over homemade herb fettuccine.
Collards, kale, cabbage, grapefruit, sweet potatoes, apples, green pepper. Harvest Box + Collards, 2/21/2014:
Snacking Apples
Jicama Coleslaw (fills shrimp tacos)
Cooked Collards (side to roasted chicken)
Apple and Cabbage Chicken
Sweet Potato and Kale Chicken Patties (with roasted Brussels sprouts)
Kimchi (using regular cabbage, not Napa)
Grapefruit Grilled Chicken
(Yes, I know…one head doesn’t do all three cabbage recipes. I already had one in the fridge.)
